Maybe a certain kind of spice or something. Any ideas will help. I will probably try them all to see which ones are best.

This will depend TREMENDOUSLY on what vegetable you are referring to.

If you just want an across the board "blanket" answer, then I would have to say salt.

It depends on the type of vegetables you are talking about and how you usually prepare them. I found that when I was younger, the reason why I didn't care for veggies much is because they were always boiled to death! I usually just use salt and pepper on my veggies, maybe others depending on the vegetable. I make veggies in different ways (boil, grill, bake, sautee).

Name one or two veggies that you are having trouble with. That would help.

Pour melted butter or cheese sauce on them. Makes most any veggie delectable.

If you are sautéing the veggies use a chef's secret - add some diced shallots. This works wonders with yellow squash and zucchini. Also, a bit of herbs de provence is good with carrots.

Roast with olive oil and pepper, carrots, cauliflower, sweet potatoes, asparagus (great grilled also),parsnips,corn, and any type of squash.I think the roasting brings out the sweetness of the vegie. Oh and red pepper flakes and garlic help.
