"Missed" dinner yesterday, woke up late and had to get off to work. Grabbed a frozen flatbread sandwich out of the freezer and brought it with.
Stouffer's Chicken Alfredo, didn't bring the package though, and I should have. It had a silver thing inside to try and brown it up a little.

If I can be bothered to cook it looks like Cod Mornay with Lemon and Coriander couscous ( maybe rice) , if not something simple like pasta with puttanesca sauce ( not home-made but excellent nonetheless) .

Tamale pie:

Mom' Recipes - Tamale Pie

I use the son's variation. Also throw in chopped jalapeno when browning meat if you like it with a kick and instead of putting the chopped garlic in the cornmeal mix, I add it to the meat. I then add some salt and sugar to the cornmeal mixture.

Tonight will be stuffed cabbage rolls with mashed potatoes and of course sliced fresh raw veggis with dip! I made some Flan for dessert.

Thanks!!!! I have all the ingredients for this, except for the yellow cornmeal. I have a buttermilk cornmeal mix - and I am thinking that probably would not work. Any opinions???

Mmm. Not sure, the cornmeal mix is probably mixed with flour, yes? It would be more like cornbread pie than tamale, but what the heck? That is how recipes are made, right? If you are brave, try it.
