We scrapped plan A for the buffalo hot dogs. Bought some but after not eating lunch til 4:30 PM we called that assortment of goodies at the Chinese buffet supper. I'd like to shake hands with Gen Tso. That was great chicken.

Made spaghetti sauce with Italian sausage and all the garlic & herbs simmering half the day. Spaghetti, tossed salad & garlic bread with 3 maybe 4 different cheeses can't remember how many I put on it. It was yummy and hit the spot with all of us tonight.

Slacker week continues, a late day of work led to the local market's take-out ribs, cole slaw, and cold Yuenglings. I plan on wrestling a coupla Black Russians later on

Thumbs up The Agenda - May 16 - 22

This week's selections for the case abode will include the following: hamburgers with Nolan Ryan beef, smoked sausage and Bush's smokehouse beans, lasagna, cheese toast, and Shake-N-Bake chicken direct from my oven. I may still go to the store later in the week to check out some frozen chicken-fried steak patties that I can use one at a time, so I may do a meal with one of those and put some cream gravy, mashed potatoes, and biscuits on the side.

Yesterday we were out as usual and went to our favorite mexican restaurant and had our usual, taquitos for me and soft chicken tacos for DH. I supppose some would say that is boring and maybe we will get tired of the same thing but for now it is what I look forward to on Saturday!
Tonight will be something easy and quick as it has been pretty hot here. Once I figure it out I will share it here!

I had a request for this recipe. Don't let the size of this intimadate you because it is not at all difficult. The first time takes a bit of doing but after doing it once it is pretty simple actually. The good thing is you do it in two parts to marinate it and then to cook it so even though it looks like a lot of work it's really not. This is how my DH prepares Tilapia:

Ingredients


LEMON
GINGER ROOT
RED PEPPER FLAKES
MINCED GARLIC
SALT & PEPPER
HONEY
MEXICAN FOUR CHEESE
CAN OF PINEAPPLE CHUNKS
HERDEZ SALSA (MEDIUM) AT ROOM TEMPERATURE
2 TILAPIA FILETS
ZIP LOCK BAG
TIN FOIL

MARINADE

1 CAN PINEAPPLE CHUNKS JUICE ONLY
LEAVE PINEAPPLE CHUNKS IN A BOWL AT ROOM TEMPERATURE TILL LATER
1 TABLESPOON HONEY
I TEASPOON MINCED GARLIC
MIX AND PUT IN ZIP LOCK BAG WITH TILAPIA FOR (3) HOURS AT ROOM TEMPERATURE

PREHEAT OVEN TO 375

ZEST 2 TEASPOONS LEMON PEAL
GRATE 2 TEASPOONS GINGER ROOT

TAKE TIN FOIL AND MAKE TWO BOATS OR TENTS THAT CAN BE CLOSED
SQUEEZE 2 TEASPOONS LEMON JUICE IN BOTTOM OF EACH BOAT
REMOVE FISH FROM ZIP LOCK BAG AND PAT LIGHTLY WITH PAPER TOWEL
SALT & PEPPER AND PUT EACH FILET IN BOAT
PUT I TEASPOON OF LEMON PEAL & 1 TEASPOON OF GINGER ON EACH FILET
PUT 6 PIECES OF THE CHUNK PINEAPPLE ON TOP OF EACH FILET
DRIZZLE TWO TABLESPOONS OF HONEY ON TOP OF FILETS
PUT TWO HEAPING TABLESPOONS OF SALSA ON TOP EACH FILET
SPRINKLE 1/4 TEASPOON OF RED PEPPER FLAKES ON EACH FILET

CLOSE TIN FOIL PUT ON A COOKIE SHEET AND BAKE FOR 12 MINUTES
(IF EVERYTHING WAS AT ROOM TEMPERATURE)

TAKE REMAINING PINEAPPLE AND SPLIT BETWEEN TWO DINNER PLATES
(AFTER FISH IS COOKED IT WILL SIT ON TOP OF THE PINEAPPLE)

AFTER THE FISH HAS COOKED FOR 12 MINUTES REMOVE FROM OVEN

RESET OVEN TO 425 (DON'T WAIT FOR TEMPERATURE TO COME UP TO 425)

OPEN THE TIN FOIL, SPRINKLE 1/4 CUP MEXICAN FOUR CHEESE ON TOP OF EACH FILET
LEAVE TIN FOIL OPEN AND RETURN TO OVEN FOR 3 MINUTES

REMOVE FROM TIN FOIL AND PLACE ON TOP OF PINEAPPLE

I LIKE TO SERVE UNCLE BENS READY RICE ANY STYLE, AND REEDS 3 BEAN SALAD WITH THIS DISH.

Going out to fire up the Weber. Grilling a brisket for supper and left overs. Potato salad will be one side and most likely homemade coleslaw the other.
