I put a meatloaf together, onion, garlic, tomato juice, oats, 2 jalapeno peppers, 2 eggs, a dash of Worcestershire an hour or so in the oven and it was delicious.

Also tossed 1/2 a very thinly sliced onion, a few tomatoes and chunks of fresh mozzarella cheese in Italian Dressing.

I visited my 85-year-old aunt this evening, and she surprised me with the most amazing dinner, all made from scratch. She rarely cooks anymore because it's such an effort for her, and I am so flattered that she went to so much trouble just for me. She prepared some traditional Polish dishes - sausage, a great cabbage dish, potatoes . . . everything was scrumptious! She even got out the good china and set a beautiful table. What a lovely treat!

That does sound lovely and how sweet.

A side note about the meatloaf I always cook for flavor and I spice just enough to taste what the spice is without being hot just to be hot. Two jalapeno peppers in a two pound meatloaf with the seems removed and chopped along with the garlic and onions is perfect for us. It is an underlying flavor without the HOT that goes with using too many peppers. In my opinion the HOT can be saved for something that should be hot from spice like Salsa if you like hot salsa.

Grilled chicken sandwich with all the "goodies":

leafy green lettuce
tomato
onion
pickle
mayo
mustard

...and on a couple of slices of toasted sourdough bread, no less!!...YUM!!!!

Not sure about tonight yet but last night was pan-fried Chicken fillets sprinkled with Tony's and served with cold Sausage Pasta. I used gloves when doing the chili-chopping thang this time, and thankyou folks for all the 'sympathy reps'!

Any ideas here? I have taken some cooked cut up chicken from my freezer (left over from another meal and I froze it) and I was thinking about adding that to some kind of marinara or pesto sauce and having it over linguine or even penn? I'm trying to use what I have here on hand to avoid driving to the store--it's a good drive and I just don't feel like going anywhere because it's so hot! I'm all ears..........
