One thing I've noticed having bought a home with a complete open concept is noise from the kitchen. While in the living room watching TV the fridge making ice, (sounds like a bowling alley), dishes being washed, dishwasher running, cabinets doors closing, microwaving dinging, exhaust fans buzzing..........
I would only remove that one wall if any, not all.
I agree with you, I had an open concept in my Florida home and hated it for the reasons you gave.
Where exactly do you think an appliance garage would go that “looks good”, should be?
Well, this is probably a dated idea, but I would have a pantry type cabinet to hold the appliances.
If it's supposed to be something on the counter to hold daily appliances like the coffee maker or toaster, I prefer the doors be different. A pantry would defeat the purpose of having them live on the counter.

I'm not a fan of just knocking down walls/vast open floorplans, but I really don't see the need for that wall. It obstructs serves no real purpose, aesthetically or functionally. An alternative to totally open would be to have a full sliding glass door at the location like this

Well, this is probably going to be an unpopular opinion, but if it were my house, I'd widen that doorway and add a sliding barn door type door. Because I can imagine wanting a larger doorway, but also wanting to entirely close off the kitchen at times. I don't like open floor plans, usually. Sometimes, they're nice, it just depends on the house, I guess.
Before we moved into our house a few decades ago, previous owners had remodeled and made half walls with counters between the kitchen and living room and also between the dining room and living room. We tore out the counters and put the walls back up. lol.

I've seen little alcoves built onto countertops where you can slide back the coffee maker, etc. Those aren't bad. I do prefer things OFF the counters, though. Maybe in my next life. ha

It's just a sliding door, though. I don't know why so many people hate them.

But yeah, either you like them or you hate them.
