I use only stainless steel pots of tri-clad construction.
They are not coated with anything, but food doesn't stick to them.
Even seriously burned stuff comes right off with a little Bon Ami.

Uhhh, rinse the pan?

No if its plain steel ;the particles get embedded in the stainless which is not very hard compared to most steels.Thus the particles rust. Look at the instructions with any good stainlesss cookware ;most advise of this.One reason that they make stainless and other material pads and why steel wool pads have oil in them.

A cooking board I hang out at says this is a sure fire way to remove stuck food from stainless: Place a small spoonfull of AUTOMATIC DISHWASHER DETERGENT into pan and add water till about half full. Simmer on low for a few minutes, then wash as usual.>>>>> Food won't stick if *pan is preheated*, then *oil preheated also* before cooking. Took me a few stuck items before I could remember this little tidbit.
