The Orient in Bethpage on the weekends for Dim Sum is the best Chinese food experience on Long Island in my opinion.
I do have to agree with you that The Orient is most excellent... never been there for Dim Sum... but, their House Special Wonton Soup is out of this world as are many of their other restaurants. We wrote a review of The Orient Last year. It's highly recommended for sure!
There is the Fortune Garden in West Babylon. It is near the high school. They changed hands, so it is a different name, but still a good chinese restaurant. It is in an old style diner type trailer.

Orient and Fortune Wheel down the road are about the same in our opinion, but the latter is better for dinners. We're chinese and have had a lot everywhere. It's definitely good for LI standards.
on a side note, I was pretty sad when Hunan Gourmet in Merrick closed. I am pretty sure the owners retired, but that place was truly great!
