We currenly have 5 sick days a year. Can't carry them over to the next year. 1 flu would wipe out those 5 days in a minute.

If your employer is willing to pay about $150 for membership in SHRM (the Society for Human Resource Management)
SHRM Online - Society for Human Resource Management you will gain access to an extensive online library to help you with writing policies (and all other things HR). The SHRM website offers sample policies and forms, white papers, news and much more. I used it regularly when writing/revising polices for the last organization I worked for.
If your employer is not willing to fork out any money, do a Google search for
"sick leave" WITH policy. You should get a good hit list of policies that you can start with. Here is one from the University of Pennsylvania
