Were looking for a small town (maybe 7000 or more) with a good quality of life, access to jobs, decent schools & a nice community, we would need to have some land for our horses too.

There are plenty of rural areas with land for your horses, the catch for me is finding a small community with 7,000 or more people.
The first place that springs to my mind is Dickson because I used to work with a lady that lived there & commuted to Nashville everyday. Here is their wikipedia link:

I don't know much about public horse trails, I had a horse growing up but we had our own property to ride on. I know in Nashville there are only 2 public trails, but I don't know too much about what the outlying areas have to offer in that regard.

^^^Yes, I would much rather live in Arrington than Dickson, especially with the vineyard
Honestly, I can name a lot more outlying areas that I would want to live in over Dickson but the whole small town thing with at least 7,000 people threw me off. That might be a tough one, unless they're willing to waiver on that.

What about Wilson County between Mount Juliet and Lebanon? Lots of land out there but there is a decent-sized town (25,000+) three miles in either direction.

You should investigate Fairview, TN which is in Williamson County (best school district in the state). Fairview is home to a 700+ city park with lots of beautiful horseback riding trails
