What parts of North Carolina is a great place to move in and have/live with the same environment as Canada or Alaska??

You're gonna have to elaborate on that because I'm really not thinking that much of NC is like Alaska or Canada. Much less snow, much more heat and humidity. What, specifically, are you looking for?

Perhaps OP is looking for forested, remote areas?

Far western NC is the closest to that.

Western NC/Appalachian Mtns is closest in climate and topography to the western US/Canada.

Lots of land available and some parts are very remote for Eastern US standards.

I would look at Murphy, NC and Blue Ridge, GA...but you aren't going to find the Canada/New England climate...NC is still very scrub-brush-ish. Once you approach VA you get into natural water sources and hardwood trees.
