Another option, for those of you in the west Valley not wanting to drive all-the-way to Tempe is the Irish Wolfhound in Surprise. They do a "club night" thing that's a relaxed atmosphere yet lively, mixed age venue with tons of good stuff on-tap, live DJ, great food, and more.

hmm...I guess that makes me "older"...hehe (31). Night life on a Thursday in Scottsdale is dominated by adult clubs in my opinion. I don't know exactly what you're looking for (whether sports bar, traditional pub, dance club, adult entertainment, and so on), but Scottsdale has plenty of adult clubs that are classy and fun.
One of my favorite regular places (that would be a nice, relaxed fit for a Thursday night) is the Tilted Kilt. It's not an adult club, to set the record strait; rather, a fun sports bar with good food, pretty girls, and a nice drink selection with a great, Scottish/Celtic atmosphere.
