Here's a good reddit thread outlining the differences, better than Big's links, which I agree, they're rather blurry. The Reddit thread is pretty good explaining the differences in practical terms.

ETA: here is a blog entry about Sonoran influences, but it also uses Macayo's as a source for Sonoran food - no. No, they're not. But the rest of the entry is pretty good.

I'm not a big Tex-Mex fan either but Tex-Mex is still better than what's available in much of the United States. I think the overall variety of Mexican food available in Arizona is the best in the 50 states, based on my travels anyway. This is purely personal preference, of course; I'm not a hardcore traditionalist, I am however a spice-hound so the spicier/more flavorful the better.

My second favorite to Arizona's Mexican options would be New Mexican cuisine...it's more old-school/traditionalist/less Americanized, so it can be quite good but it can also get a little repetitive sometimes depending on where you're at and how many restaurants are available to you. Here in the Phoenix metro, there are so, so many choices that you never have to eat the same meal twice unless want to.

Talking about all this makes me want to hit up Comedor Guadalajara right now.

Here you go: Phoenix Tex Mex Restaurants: 10Best Texmex Restaurant Reviews

Z'Tejas Grill
Fajitas
Sierra Bonita Grill

These are all on the top 10 list of Tex Mex in the valley ^ which is where the link will take you. I've done the Sierra Bonita Grill and it was pretty tasty.
