Statues very often have to play a balancing act with rights. I am more than okay with taking away the right of a business owner to discriminate and deny service based on an innate, biological characteristic such as race or sexual orientation in order to preserve the right for all people to be able to freely engage in commerce - a public good.

You're the one who seems to think that public accommodation anti-discrimination laws such as this Oregon one violate the Constitution. Would you care to explain to me how? I don't see it (and the courts haven't seen it either).

The courts do see it. A private company is free to discriminate. There are men only clubs and women only clubs - all perfectly legal.
You are hung up on the "innate biological characteristic" because it fits your agenda. Every constitutional right is equal in weight.
I wouldn't spend money at a bakery that chooses to discriminate but I sure support his right to be a fool.
