What are Christians trying to prove by having multiple clubs and organizations on most college campuses?
Oh, that's right, nothing. They're just looking for likeminded people to offer support and discussion in their philosophical/spiritual worldview. Sort of like a secular group, except the secular group is almost certainly a minority while the Christian group is the majority in most parts of the country. One could argue that the majority has even less of a need of an organized group for this purpose than the minority.
There is a "Secular Student Alliance" at a local college. What are they trying to prove? That they can have a club too since the Christians have one?
Here is their "mission" and goals.
Atheists always brag about how they are never harming anybody and they "let Christians be" but this isn't proving it. They even had a day called "Blasphemy Day" where they wrote bible verses on the sidewalk in chalk that sparks controversy, all from the Old Testament(such as killing someone in a different religion, etc). Predictably, they only seem to focus on Christians, and not Muslims or Jews.
So, let's get this straight, you are complaining about atheists doing the same thing Christians do all the time? When Christians do it and it is OK and when Atheists do the same they are Wrong, Wrong, Wrong. Cons; Kings of the Double Standard.

How is writing a quote from the Old Testament something that focuses exclusively on Christianity and not equally on Judaism?

The Old Testament is considered scripture by all 3 Abrahamic religions.
