I think that the only 2 chain restaurants we go to are:
Jason's Deli. I don't know anywhere else where I can get a Liverwurst/Braunschweiger sandwich or a Muffuletta sandwich. I usually order their salad bar though.
Dickey's BBQ. For my Texas-style BBQ brisket fix
Other:
Flying Saucer for draft beer. There are other local places that are really good too. I wish that someone would open a Gingerman-type draft house in a historic house in Apex.
I have no use for Maggianos - the most overpriced/under quality Italian place I have ever been to. But to answer the question, I like Cracker Barrel, Mickey D's, Hardees and Biscuitville biscuits, Lonestar Steakhouse, Ragazzi's (not really a chain anymore), and Bob Evans (breakfast only)
I enjoy Chipotle and Pei Wei for tasty and inexpensive lunches / dinners. I agree with New User about FLying Saucer - It is pretty cool and you can't beat the beer selection there. I favor indy places, but a chain place done right in a good location has its place too.
Since the OP wasn't specific about national vs. local chains....
Local Chains:
Los Trey Maguyes - I swear DW and DD and I eat here once a week National Chains:
Papa Johns
Jason's Deli Fast Food Chains:
Chick Fil A Best Late Night "I don't care how the food looks or tastes" Chain:
Waffle House

I like Chipotle, Perkin's, Pei Wei, and Bojangles. It helps when traveling out of town to know where the good chains are, b/c sometimes it's just tough to find good local places you're not familiar with. I really wouldn't pick a chain over a local restaurant here though, unless it has already been chosen by a group of people I am meeting.
I never knew there were/are so many Cracker Barrel lovers in Raleigh. I mean everytime I drive past the one on Airport the parking lot is always packed but I just figured that those were "out of towners".
BiggJoe, what's funny is that I'm a southerner born and bred, but don't really care that much for southern food (probably because I have Yankee parents so we never ate it). But once or twice a year, I crave it and Cracker Barrel hits the spot for me. I know there are places more southern, but Cracker Barrel southern food seems 'safe' to me comparatively .
