I think there are a lot of towns in the Triangle that meet that criteria. I would say Chapel Hill and Carrboro for sure (they are pretty much the same town as far as day to day living in them goes). Chapel Hill has a fantastic library and independent bookstore. Carrboro has a great local health food coop store, Weaver Street Market.
You can find all those things in Durham or Raleigh too.
Hillsborough also has a cute bookstore (Purple Crow) and a branch of Carrboro’s Weaver Street Narket. It’s a very cute historic town that is becoming more popular.
Y'all folks who are saying "Carrboro" do know that there is NOT a bookstore in Carrboro, right? That's one of the things the OP asked for. Also not a "natural pet product store". Both of those are in Chapel Hill. I think for the specific things that the OP asked for:

The parts of Chapel Hill adjacent to downtown Carrboro are really all the same character wise - just different towns.

Gee, I wonder if the town is going to refund the money that Julian Carr gave! History is the PAST. How can we change the PAST? We can't but we can learn from it.

People need to get a grip. I understand a lot of the name stuff and the way they want that, but ffs you can't re-write history. Change a town name, sheesh. Get a life and do something productive with it.
The Board of Aldermen decided against renaming the town, saying it would be too complicated and costly. Instead, a group will gather this month to start working on a "Truth Plaque" that will acknowledge the town's history while also affirming its commitment to working for social justice.
