simple squash patty recipes (pancakes, black pepper, onion, egg)

I have one that I make

Zucchini pancakes:
3 medium sized zucchini's shredded (squeeze any excess liquid out of them using a kicthcen towel or paper towel)
1 egg beated
1 small onion chopped
1 tsp salt
1 tsp black pepper
2 tbsp flour
1/2 cup seasoned bread crumbs
canola oil for frying

Mix all together in a bowl, if mixture is too wet to form patties then add a little more flour or bread crumbs. Shape into patties and shallow fry until crisp on both sides, about 3 minutes a side on medium high heat
