I don't use my oven so baking them is out of the question. But I hear that they are much more healthy than regular potatoes. Any way to use them without putting them in oven first?
If you boil them and puree with some milk and seasoning in the blender, it makes a yummy sauce to serve beneath some pork/chicken, or you can mix the puree with alfredo or cheese sauce and serve over pasta.
I second boiling, then mashing with some milk or even whole cream, I would also add some butter and cinnamon (or cinamon and sugar, depending on desired sweetness) to the mix.
