I don't use my oven so baking them is out of the question. But I hear that they are much more healthy than regular potatoes. Any way to use them without putting them in oven first?

You can boil them the same as you do regular potatoes or if you have a microwave, you can cook them whole.

If you boil them and puree with some milk and seasoning in the blender, it makes a yummy sauce to serve beneath some pork/chicken, or you can mix the puree with alfredo or cheese sauce and serve over pasta.

I second boiling, then mashing with some milk or even whole cream, I would also add some butter and cinnamon (or cinamon and sugar, depending on desired sweetness) to the mix.

I toss them in the microwave using the Baked Potato setting. You can also boil or steam them.

Another vote for microwaving.

Another option would be sweet potato fries served with maple srup and melted marshmellows.

You can make sweet potato French fries. They are very good with salt and pepper on them.

You can cube and saute them. I add some red onion, spices and greens.

Why don't you use your oven? I'm curious.
