Somebody asked for easy bake sale stuff. Heres a couple of quickies. I used to have quite the rep for makin phat stuff when I worked in the office. Just remember presentation is everything. For example at Christmas I bake my cakes in an angel food pan so they will look like wreaths. Sometimes I dude them up with marachino cherries and pecans and other stuff.


Fruit Cocktail Cake

1 can fruit cocktail undrained
2 cups flour
2 cups sugar
2 eggs
1/2 cup raisins
1/2 cup chopped walnuts

Mix with a spoon and pour in greased pan. You can mix them in but I sprinkle the nuts on top so they will toast. Also it looks better. Bake at 350 for 45 min to 1 hr depending on pan.


3/4 cup butter
3/4 cup powdered sugar
3/4 cup evaporated milk
4 oz cream cheese optional

Boil and pour over hot cake. Poke with a knife so it soaks in. Cake tastes better if it sits overnite or longer.






Granny Cake

2 cups flour
1/1/2 cups sugar
1 tsp baking soda
1/2 tsp salt
---------------
2 eggs
20 oz can cushed pineapple heavy syrup undraind
----------------

1/2 cup brown sugar
1/2up chopped nuts


Mix dry stuff together. Add eggs and pinepple and mix well. Pour into a greased 13x9 pan.
Sprinkle top of batter with brown sugar and chopped nuts. Bake at 350 for 40 min. Pour topping over hot cake immediately. This is another cake that tastes better after it sits overnite.


Topping

1 can eagle brand milk
1 stick butter

Put in bowl. Nuke in microwave until melted and just starts to boll

Default It's testing by me at various past bakesales.....HUGE SUCCESS!!

This one is a quicky success, so easy to make....and NOT MESSY when serving AND it tastes so yummy!!!

Mini- Cheesecakes

12 vanilla wafers
2 8oz. pkgs. cream cheese, softened
1/2 cup sugar
1 tsp. vanilla extract
2 eggs

Preheat oven to 325 F.
Line muffin tin with paper or foil cup liners.
Place one vanilla wafer in each liner.
Mix cream cheese, vanilla and sugar on medium speed until well blended (scrape down the sides of the mixing bowl in between).
Add eggs- mix well.
Pour over wafers, filling 3/4 way full.

Bake for 25 minutes.

Remove when cooled. Chill.
Top with fresh fruit, pie filling, preserves, nuts, chocolate...etc.

I will be baking for a Bake Sale next month. I love to bake and I can't seem to narrow down all the good choices.

Do you have a favorite Bake Sale goodie? Please post recipes

Good Lord, Have you any idea what you've asked for?

Ms. Midwestern and I have been contributing to bake sales for decades

Here are some goodies:

Apple Slab Cake
  • 4 Cups flour
  • 1 tsp. salt
  • ½ lb. shortening (2 sticks, 16 TB. or 1 Cup)
  • 2 large egg yolks, beaten
  • 30 crushed vanilla wafers (about ¾ Cup)
  • 1 Cup sugar
  • 1 tsp. cinnamon
  • ½ tsp. ground nutmeg
  • 3 lbs. apples, peeled, cored and sliced
  • 3 Cups powdered sugar
  • enough water to make a thick glaze (a tablespoon or two)
Put beaten egg yolks in a 1 cup measuring cup and fill with water to the 1 cup line. In a roomy bowl, combine flour and salt. Cut in shortening. Add the egg yolk/water mix and stir just until incorporated. Set aside. In a separate bowl, combine sugar, cinnamon and nutmeg and set aside.

Preheat oven to 450°. Divide the dough in half. Roll half out to fit a 16½ x 12½ inch cookie sheet. Place rolled-out dough on cookie sheet. Sprinkle with half of the vanilla wafer crumbs. Spread half of the apple slices on top of crumbs. Sprinkle the rest of the vanilla wafer crumbs on top of the first layer of apple slices. Top with the rest of the apple slices. Sprinkle cinnamon/sugar/nutmeg on top of second layer of apple slices. Roll out second half of dough large enough to cover bottom layer of dough and apple filling. Lightly moisten perimeter of bottom layer of dough with water. Place second layer of dough on top of bottom layer of dough and apples. Seal the two layers of dough and crimp. Make a few small slits in the top crust to let steam escape. Bake at 450° for 20 minutes. The apples will still be slightly firm. Combine the powdered sugar and water to make a glaze. Pour the glaze over the cake while the cake is still warm but NOT hot, at least 30-45 minutes after taking out of the oven.

Prep. time: 90 minutes
Cooking time: 20 minutes
Serves: 24


You can cut this into squares about 2" on a side.


Bourbon Balls

1 (12-oz.) box vanilla wafers
1 cup powdered sugar, sifted
1 cup pecans, chopped fine
½ cup cocoa powder, sifted
3 ******* bourbon
3 Tbsp. dark corn syrup
Additional powdered sugar for coating

Crush the vanilla wafers very fine. Combine powdered sugar, pecans and cocoa in a medium bowl and mix well. Mix the whiskey and corn syrup together in a separate container, then pour over the dry ingredients. Blend well – should be very hard. Roll into small balls, and roll the balls in the additional powdered sugar. You will want to spray your hands with pan spray; the chocolate mixture is very sticky.

Store in a tightly covered container or in a Zip Lock bag in the refrigerator.

We make this every Christmas, and is universally sought after

Fruitcake Cookies

Oven 350 degrees
Greased cookie sheets
Yield: 200-225 cookies

1 stick butter
1 tsp. cloves
1 ½ cups brown sugar, firmly packed
1 tsp. allspice
4 eggs
3 tsp. soda
¾ cup whisky (bourbon, rum or brandy)
1 ½ lbs candied cherries
3 Tbs. milk
1 ½ lbs candied pineapple (green & red)
3 cups flour
18 oz. raisins (dark, light or a mixture)
1 tsp. cinnamon
1 lb dates
1 tsp. nutmeg
6 cups nuts (walnuts or pecans)

Preheat oven. Cream butter & sugar. Add eggs, one at a time, blending well. Add whisky, then milk. Sift dry ingredients and add to above mixture, reserving one cup of flour to mix with fruit and nuts.

Coarsely chop fruit and nuts and place in large roasting pan (note: your mixing bowl will NOT be big enough! If you don't have a large roasting pan, use a clean dish pan.) Mix with the reserved cup of flour and spice mixture, then pour the batter over the fruit/nut/flour mixture and fold to combine thoroughly.

Drop by teaspoonfuls on greased cookie sheets, and bake at 350 for 10-12 minutes. They're fragile when they're first out of the oven; use care in transferring them to the cooling rack.


This makes enough to feed the 101st Airborne Division (or large military unit of your choice. ) They're really yummy.

I see that Spouse has already shared some good ones from our files, but here are a few more you could consider:

No-Bake Peanut Butter Cookies (this one is Vegan, if that's important to your bake sale clientele)

1 c. white sugar
1 c. white corn syrup
1 1/2 c. peanut butter
1 1/2 tsp. vanilla
6 c. corn flakes

Heat sugar and corn syrup in a large saucepan until sugar is barely dissolved. Stir in peanut butter and vanilla until thoroughly blended. Stir in cornflakes. Drop by spoonfuls onto greased parchment paper and allow to cool a few hours.


Chunky Pecan Bars

Crust:
1 1/2 c. all-purpose flour
1/2 c. firm-packed brown sugar
1/2 c. cold butter, cubed

Topping:
3 eggs
3/4 c. sugar
3/4 c. dark corn syrup
2 Tbsp. melted butter
1 tsp. vanilla extract
1 3/4 c. semisweet chocolate chunks
1 1/2 c. coarsely chopped pecans

In a small bowl, combine the flour and brown sugar; cut in the butter until crumbly. Press into a greased 13X9 baking pan and bake at 350 for 10-15 minutes, or until golden brown.

While the crust is baking, in a large bowl, whisk together the eggs, sugar, corn syrup, melted butter and vanilla until blended. Stir in chocolate chunks and pecans. When crust comes out of the oven, pour the topping mixture over the hot crust and spread out evenly to the edges of the pan.

Bake for 20-25 minutes, or until topping is set. Cool completely before cutting into bars.


Lemon Bars

Crust:
1 1/2 c. all-purpose flour
2/3 c. confectioner's sugar
3/4 c. butter at room temperature

Topping:
3 eggs, lightly beaten
1 1/2 c. sugar
3 Tbsp. all-purpose flour
1/4 c. lemon juice
Additional confectioner's sugar for sprinkling

In a small bowl, combine flour and confectioner's sugar with butter until crumbly. Pat into a greased 9X13 baking pan and bake at 350 for 20 minutes.

While the crust is baking, whisk together eggs, sugar, flour and lemon juice until frothy. When crust comes out of the oven, pour the lemon mixture over the crust, spreading it out evenly to the edges.

Return the pan to the oven and bake another 20-25 minutes, until a light golden brown. Cool completely. Sprinkle with confectioner's sugar and cut into bars.

Raspberry Bars:

Step #1-Crumb mixture
on low speed of mixer- mix 2 1/2 cups flour, 1 cup sugar, 1 egg and 2 sticks butter (softened)

Step #2- Grease and 8X8 pan-
By hand press half of the crumb mixture into the pan, add 8 oz of Raspberry preserves (seedless), then top with the other half of the crumb mixture and press down lightly. Bake at 350 degrees for 45 minutes. Make sure the bars are toally cooled before cutting them into squares.
This recipe wrosk well with any flavor preserves you like. My mom always does it with Rapsberry but you could use Strawberry, Pineapple, cherry ect....Very easy to make.

I like bars and drop cookies for gifts and bake sales. They are easier to divide and package, if you will be contributing small things. For a bigger item that will be sold whole, a glazed bundt cake is good. They are pretty, not overly frosted (messy to transport), and heavy. A lemon poppyseed cake or real pound cake are always welcome.

Also pies. Pies always sell.
