Have you tried Brazilian Cheese Bread? I had some at a farmer's market one day. And now one of the local delis sells them. They are fluffy, cheesy and gluten free!
Yes! I first had them in Rio at a churrascaria. The bread basket kept coming and I nearly filled up on them. I've not attempted to make them from scratch though. I've seen them in the grocery store (either Whole Foods or Ralph's) in the frozen section, in a very small box for kind of a high price. I have never seen them in a deli or any non-Brazilian restaurant, though.
I don't have the flours specified in the recipe on hand but thank you for pointing me to gougeres...that I do have. Going to try it today. I have made cream puffs but never thought of cheese puffs using the same batter.
Next time at a Colombian bakery, ask for either pan de bono or almajabanas. I believe pan de bono is made from literal cheese while almojabanas are from milk curd
