I can think of so many ways to use lemons. I used Lemon in my split pea soup, other soups as well. I almost forgot Spoiled brats favorite salad dressing is simply lemon and oo.

I squeezed some lemon on my homemade bean soup and even a too-unctuous pasta bake made with noodles, ricotta, and Marcella Hazan's tomato, butter, and onion sauce this week. I love lemon.
My favorite lemon recipe is Avgolemono (Greek Lemon Chicken soup). Second favorite is a quick lemon chicken, broccoli and rice stir fry. I use lemon juice and chicken stock to cook the rice, toss in a little soy sauce and more lemon juice at the end.
I made lemon curd to spoon over warm gingerbread cake at Christmas. It takes 30 minutes to make start to finish. 6 egg yolks and a stick of butter, a little goes a long way.
I’ve also made the salt preserved lemons for tagines and gave jars as presents for Christmas. That just takes lemons, lots of sea salt, jars and time to be ready.
I have a Meyer lemon tree, they aren’t as tart and are really juicy. My lemon curd recipes calls for the juice from several lemons to get a 1/3 cup. One of my lemons gives me that and more.
I want to try limoncello this year too, a friend brought some from his family farm in Sicily a few years ago and it was so good.
Roasting a duck, cavity has spice mix and a lemon- can't wait - YUM!
Make sure you score that skin. My wife surprised me with a roasted duck one evening. As it was cooking, the smoke alarm went off, so we ran to the kitchen to see smoke billowing from the oven. When I opened the oven door I saw that the duck was inflated and two jets of superheated duck fat were spraying from the end of the legs into the hot oven. I guess the legs were the path of least resistance.

These will work, but there are many variations. Lemons are a staple in our kitchen.
