Why would roommate 2 even invited Joe out in the first place, knowing that roommate 1 invited him over to hang out because she met him while out one night. Since Joe was a classmate of roommate 2, seem like roommate 2 had other opportunities to have invited Joe over to hang out before roommate 1 did. Sounds like roommate 2 have knocked roommate 1 out of the picture before anything really got started.

You guys are getting the story confused.

The night roommate 1 met Joe, she had his number but he didn't have hers. This was a Saturday. I saw him in class on Tuesday and he got my number. Then on the following weekend, roommate 1 texted Joe at around 9pm. Up until this point, Joe had never texted roommate 2. Joe didn't text roommate 2 until much later in the night, after he stopped replying to roommate 1.

You knew she had brought him home.

Easiest thing to do would be to ask your roommate if she's cool with you hanging out and studying with the guy. If she says no, or says yes but then behaves passive aggressively toward you, then you can decide which battle to pick.
