I still think the Foundation Trilogy is the best SF I have ever read. The Last Question is a great short story. I had read it decades ago, but thanks for the refresher! Asimov was indeed a genius.

The stars and Galaxies died and snuffed out, and space grew black after ten trillion years of running down.

The only problem, as I understand cosmology is that the dying stars create new stars so how the process would come to an end is beyond me.

Dying stars don't create new stars. A star dies because it has used up all of its hydrogen fuel.
