Pop's Ice Cream and Soda Bar on Grandin rd. has veggie options. Wildflour restaurant in Towers mall also has some good organic veggie foods. Not sure abt entirely vegan restaurants though. Checkout Roanoke Natural Foods deli/cafe. Its a co-op grocery store & they have great organic foods.

The co-op that asma410 mentioned is definitely good for vegan options, and both Wildflour and Crock & Roll (both at Towers) usually have vegan options. Vegetarian options are more varied which you probably expected. Restaurants with decent vegetarian fare include the following (not a complete list at all!):

Red Jasmine Thai in Vinton
Zorba's in Salem (used to be in the Market Building, he is a local fixture and his food is delicious)
Nawab Indian downtown (lunch buffet is a good value)
Hollywoods (http://www.hollywoodsrestaurant.com/Hollywoods_Website/Welcome.html - broken link)out at Hollins

The new Market Building has several tenants that will have nice veggie options too. As for chains, there are Ruby Tuesday restaurants at Cave Spring Corners and at Valley View, and they have a really nice salad bar with lots of good stuff to choose from, and some nice veggie sides (mashed cauliflour is good & garlicky).

I hate to diss Alejandro's because we love the big beers and the salsas and the atmosphere and pretty much everything else, but they're not very careful with their vegetarian dishes & we've found bits of meat here & there in our dinners on several occasions. We still go for the beer & chips/salsa

These are just off the top of my head, there are others for sure, and more opening all the time (a new falafel place just opened on Brambleton called Double Apple, it looks good too).

Three of the four in my house are veggie & we've been here 3 years. No problem finding veg food at all.

Indian & mexican restaurants do have variety of veggie options. I personally luv Taaza (Indian) & El Rodeo, Abuello's (Mexican)
