Unsure about the quality of the sunsets but the Pearl has a nice amphitheater that is ideal for a picnic if it is not crowded for an event or something.

Take her up to Boerne City Lake. It's peaceful, usually not a lot of people there, very scenic and it has a decent sunset. It is open until after dark, so stay and watch the stars come out. Has restrooms, fishing piers and docks, picnic tables, walking trails....everything you need. Great spot to watch the sunset is on top the dam...there is a walking trail up there, and it overlooks the lake facing west. Thank me later.

If you're looking for a downtown view, this might do. There may be a few people taking a stroll or a cyclist coming through, but overall at sunset this is a very quiet place. The sunset won't be over downtown in the summer, but you'll have a view of the sunset AND a view of downtown from the Hays Street Bridge.

On Hays Street

From 281 take the Nolan exit. It's east of 281 and north of the Alamodome.

I had the same question, as up in Austin we used to go to the top of Mount Bonnell in west Austin (the highest point in the city) and view the sunset, which was just beautiful (that point is just above Lake Austin and has great view of the Hill Country).

If you hike through Crownridge Canyon Park and take the dirt trail that goes to the top of the hill, you get a really nice view looking south. Might be nice during sunset (I've usually gone in the morning).
