Uno's chain is a sad stepchild of the original in Chicago. It's not the recipe that makes their pizza good... It's the 100+ year old oven. You can't replicate that unfortunately.

Very true. The original is amazing, as are so many other Chicago-style places (in Chicago). By the way, I just went to Kennedy's out on Potranco a few weeks ago, as I heard they have great Chicago-style. I should've known something was wrong when they told me that a deep dish wouldn't take more than 20 minutes to cook. Bad--although it was better when I threw the leftovers in the oven for 15 minutes at home--and the restaurant space itself is a travesty. It's like a Subway with dozens of screaming children in a weird part of town with employees who don't know where they are or what they're doing. Yikes.

Righto. Been to Kennedy's as well and it was a sad little (the space), a little annoying (the children) and overall disappointing (the deep dish). 20 minutes to cook a deep dish pie is a travesty. 45 minutes to an hour minimum for proper Chicago-style.

I also found it a bit suspicious that Mr. Kennedy (who was there) couldn't tell me what some of his favorite pizza joints in Chicago were. I'm an original Chicagoan. Like breathing, it's only natural that we can name-check our favorite pizza (and dipped Italian beef/hot dog) spots on a moment's notice.
