2500 sq ft house with AC in summer I'm hitting 150 a month. Fall and winter I'm at about 90-100. But I have great insulation AND attic vent fans. I think the attic vent fans make a HUGE difference.
In Rancho Mirage expect to have at least a 400 dollar electrical bill. You're cooling twice the house and at least 10-15* higher than where I am
If you're interested I have a friend who is selling out there if you haven't purchased yet.

Plant some trees near your home, shade helps A LOT. Prepare to spend a LOT of money on electricity.

Consider solar panels and like the other person said, the attic vent fans.

If you are the only one of you or two, I would just get the portable or window air conditioners in the rooms you frequent to save money.

Why would a retiree want/need 5000 sq ft?

That's a lot of empty space to cool/heat.

Plan on $1K per month, anything less will be found money.

You could rent out half of the house to be used as a roller skating rink, that revenue would defer part of the electric bill.

I like a lot of 'space'....i am cramped into 2100 sq feet so for the balance of my life I want a BIG place. I want my living areas to look like showrooms.
