lamb's liver in Spokane? Any ideas?

I've tried liver & bacon/onions with beef liver but it's just too coarse and not the same at all.

I would call local butchers. We raised sheep for several years and when we took lambs in to be processed, we didn't want the livers. I'm sure other people are the same. Your best bet is after county fairs when tons of people are sending lambs to the butcher.

What do you mean by "butchers" and how would I locate them?

I'm not from here LOL, obviously - to me a "butcher" is a stand alone meat market, which we don't seem to have any of in Spokane.

I see your point. I'm talking about the small meat processors that people take their meat animals to for butchering and hunters take their deer and game animals to. I live in north Idaho and know of the local processors in this area. If you need names, let me know.

If neither of these guys can help you, I bet they can point you in the right direction.

With all the hunters in Spokane and so much beef and chicken raised in the area, there has to be quite a few more, but these are two I'm aware of.

This is the first year we don't have lambs heading off to the butcher. If I did, I'd give you the livers! We raised the best lamb. Totally free range, never forcibly weaned...they lived heavenly lamb lives till they went off to "freezer camp" in October. Tender and flavorful but not too strong a taste. I need to go take some out of the freezer!

i was goign to say it might be worth taking a drive around local farming areas and see if theres any sheep farmers about...

wrong time of year for fresh lambs liver i think, but if you let sheep farmers know you want them many will give away the livers!

Actually, it's not a bad time of year to get fresh lamb anything. Lots of farmers have their sheep lamb later in spring to avoid the worst winter weather and send them off to butcher in fall. We always did that. Lamb is anything under 12 months.
You may be thinking of spring lamb which is usually butchered before July 1, or 3-5 months old.
