I honestly don't need beans in my chili, but I gotta have the tomato chunks.

When it's hot, just add the white rice, cheese, butter, and cornbread (with a little sugar, to add some Soul to it).

This sounds like a gumbo to me, certainly not chili.

I guess because I grew up eating saltine crackers with chili, (or tortilla chips or Fritos or w/o anything on the side except onion ~ always got to have some onion on the side) I never even considered cornbread with it. I'm not adverse to trying new things, but the way I make my chili, I don't think cornbread would go with it very well. LOL Not like it does with a pot of beans or goulash, per se. But everyone to their own preferences.

I still stand by my original comment that the way you describe your chili sounds more like gumbo to me, regardless of how good it might or might not be. Chili just don't have no damn rice in it!

My mother would make rice to go with her chili, but I don't believe it is a Texas thing, probably to cool it down and used more as a filler. I did put a lot of saltines in chili, usually because it was too runny. As a kid my school would serve Wolf Brand and it would take a lot of crackers. From that, there was no where to go but up. Cornbread would only be served as a side, and not put in the chili like I did with the crackers. Now I would break up cornbread and put it in a bowl of red beans and rice, with Tobasco, but that was not chili.

Uhh, that's because it's not chili. It's a dish that has chili in it. Everything is cooked seperately.

The ending result could be referred to as some type gumbo. I'll accept that title. All I know is that it's a damn good.

I probably should've specified, though, that this is all done in a seperate bowl. Those things aren't added to the pot (except the tomatoes).

I don't know if it makes it not true Texas chilli or not, but I've won awards with mine, and it is pretty amazing (even if that is tooting my own horn). Beer base (no cheap watered down mass produced american swill either, a good amber to dark micro brew) two types of beans, chopped tomatoes, fresh onion, jalapeno, serano, red and orange bell pepper, lots of good quality meat, and the rest is my secret. It also has to cook for a minimum of 6 hours to all seep in and layer those flavors in.

As for the people talking about rice or noodle bases for their chilli that seems to be a midwest thing, and it is an unholy abomination

Considering the fact that my family (who has no roots in the Midwest) has being doing it for ages, I can assure you that, in my case, it's purely southern. If anything, it's probably influenced by Louisiana cooking, as gumbo is often served over rice with cornbread.

I've never heard of anyone adding noodles to their chili. As another guy brought up, I would just call that goulash, and that just reminds me of those canned meals you get at the grocery store.
