I plan on getting a career involving Spanish, but i'm not sure exactly what yet.

I'm looking for a safe, nice looking city, with a Spanish influence.

Any opinions anyone?

What about San Antonio?

SA is a good choice. Too many plusses to list. It's the top vacation city in the state for obvious reasons. Downtown is fantastic. Nearby Hill Country area is wonderful (think small well-kept B&B towns, some have German strong influence). Heavy Mexican influence so Spanish is abundant. The National University of Mexico has a branch campus in SA.

I hope is isn't because you speak spanish that your intending to earn a living because other than teaching other subjects in spanish ;your one amoung a million that have that skill about anywhere in texas.

The closer to the Mexican border, the denser the Spanish speaking population becomes. The largest Spanish speaking metroplex in Texas is El Paso/Juarez. That would be my choice if I were looking for immersion in Spanish speaking enclaves. Many jobs in El Paso "require" Spanish fluency.

You can't go wrong with San Antonio, also consider the Rio Grande Valley (McAllen, Harlingen, Brownsville etc.) everybody down there speaks Spanish.
