How is Houston down to earth... when it's the city of space!
Mediocre jokes aside,

Dallas: Southwestern feel, fairly right-leaning, cowboy-like, cool.
Houston: Bayou, a mix of stereotypical Texan, cajun, and hispanic. Calm and quiet atmosphere, huge in buisness.
Austin: Hipstery- but in a good way. Nature-y, artsy and fun! Also, left-leaning.
El Paso: Tex-mex, exciting, and very friendly.
San Antonio: Historical! Remember the Alamo, etc. Also Tex-mex. Relaxing vibe.
Galveston: Old, beautiful buildings, a little sad mood, but also full of life and excitement.

You obviously haven't been to Dallas. Are you confusing it with Fort Worth? There are some cool aspects to Dallas, but Cowboys aren't one of them.

So lack of cowboys means it must be yuppie? How did you reach that conclusion? Dallas is very diverse with several different style of neighborhoods, depending on your "niche." Deep Ellum is mostly hipster and alternative/grunge, while Uptown tends to be very yuppie.

If you search for it, you can find some honky tonk and country bars in Dallas. The West End has a couple of cowboy wear shops. Occasionally, you will see someone wearing a cowboy hat. But I don't think the whole "cowboy" thing is more prevelant in Dallas than in Austin or Houston. If anything, you'll probably notice cowboy hats and boots more in those latter cities.

No, he's right. You will see more cowboy gear in Houston. Not a great deal more, but Dallas is decidedly less Texan in culture.

I'm a fairly new Texas resident, but even from my eyes, Dallas doesn't have a very "Texas" or "cowboy" feel. Fort Worth, yes

You'd have to go in person. That photo looks nice. Joe Pool Lake is OK, IMO, but the water (like all DFW lakes) is very silty. Austin's water holes are much clearer.

I found Austin's summers much more tolerable than the Metroplex's because of the large number of clean swimming holes.
