Looking at air one way on UA from Rome to Newark is $2100 but a round trip is $660???
Has anyone done a booking like this and canceled the return??
I just did something similar. Flew to BUD in Business Class on points, and then purchased a 500 dollar ticket to get home from Amsterdam and threw away the return.

I've read that you don't want to make a habit of it (especially if you are a frequent flier) but you should be good to go, I had no problems. I just didn't show up.
What I also did, which may sound silly, is I picked middle seats in 3 person rows so that hopefully some lucky souls got to fly without someone in between.

This will be a first one way for me, the air threw me so that is why I plugged in the round trip

Nice of you to think of the other passengers, but it strikes me as unneccessary. Even if you had booked an aisle seat, there's nothing stopping the person in the center seat from moving over once the cabin doors are closed.

Seat likely went to an airline employee flying on a 'non-revenue space available' ticket (aka free standby ticket) when you fail to check in for the return flight.
You need to refine your search. I didn't have any trouble finding one way flights in April from Rome to JFK for under $300. Check TAP Portuguese airline.
As for cancelling tickets, I flew to Manila last year for $840 RT (too much, but I bought it on short notice) on United. They deducted the one way fare and their standard 250 smackers to change flight, and told me I had no value left. But it varies by airline. Lufthansa charges nothing to change a ticket, and Emirates only $75,

How are they as an airline? Budget carrier? I usually stick to UA or a legacy carrier.
Also avoid JFK, the savings can get eaten up in tolls,gas, traffic and frustration back to NJ
My flight back would be arouns Mid May as I want to spend a few days in Rome post cruise. The $2100 one way is more than the dam cruise lol
