Not including pop music. I'm talking traditional folk music. And what do you appreciate about them?

I find both Turkish and Indian music mystical and intriguing. Also attracted to France with it's accordian music. Japanese music, especially Okinawan folk songs, are surprisingly melodic and also very evocative, while I enjoy the richly vibrant African chants and the tribes of the hill-tribes in South-East Asia. Balinese orchestras are also very nice, I like the metallic sound. I suppose Western classical music deserves a place.

Mexico and Greece are among the very few westernized countries in which their own forms of music in their own language are still heard, as often as the universal American style that is ubiquitous in almost every other country.

My own personal favorite is the Soukous music of Kinshasa, Congo, that remains very popular there, following a 1960s African jazz style -- completely different from the "African" sound that has been borrowed by Latin American groups and it so widely heard in World Beat genres. http://soukousradio.com/listen.asx

I like that stuff too. Aside from their original countries, you will find it in abundance in the maritime provinces of Canada.

That's what I like about Indian pop music. It still retains an Indian flavour, whereas say Mandarin pop music is just western style with Mandarin words.

I love Indian music and Romani music from the Balkans. Also, Turkish music can be quite interesting, but it's much less on my radar.

ETA: I also really enjoy Afro-Cubano music.

The music of Cabo Verde, singers such as Cesaria Evora and Herminia and groups such as the Cabo Verde Show. Also like other Luso-African music, e.g. Tabanka Djaz
Portuguese fado
Pakistani Qwali
Arabic pop, started by listening to Om Khalsoum many years ago
Indian pop...Bollywood, and devotional music (bhajans)
Greek pop, like George Dalaras, Ana Vissi
