    Observation: Potato salad and sliced beef not date marked. Marked at time of inspection.

    Observation: Burger toppings are not held at 41 degrees. Discussed using time as control.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation: Temperature device at time of inspection was blue dial type thermometer.
  • Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
    Observation: Sausage gravy in walk in cooler holding at 47 degrees from the night before. Discarded on site.
