Observation: Metal shelves in walk- cooler are soiled, becoming rusty and needs to be cleaned.Non-food contact surface must be kept clean and free from debris.

Observation: Hand-washing sign is missing at hand sinks next to walk-in cooler. Every hand sink use by employee must have sign posted reminding employee to wash their hands. Provided sign to the manager. Corrected on site. COS.
- Equipment location, installation, repair, and adjustment
Observation: Condenser discharge line in walk-in cooler is dripping on food box and has ice on it. Food must not be stored under leaking water lines including or under lines on which water has condensed. Manger removed boxes and called for service.

Observation: In the walk in freezer observed standing water. This appears to be dripping from the fans on to the floor. REPAIR AS NEEDED. SHALL SEND LETTER OF CORRECTION WITHIN 10 DAYS. FROM A CERTIFIED REFRIGERATION SERVICE THAT THIS COOLER IS NOT ALLOWING STANDING WATER FROM THE FANS.

Observation: In the walk in chicken cooler two racks have EXCESSIVE FOOD DEBRIS BUILD UP. During this inspection one of the food employees started cleaning one of the racks. This rack needs more cleaning. The other rack also needs detailed cleaning. SHALL SEND A LETTER OF CORRECTION WITHIN 10 DAYS THAT BOTH RACKS HAVE BEEN CLEANED AND VERIFY A IMPROVED CLEANING SCHEDULE TO KEEP THE RACKS FROM HAVING SO MUCH BUILD UP.
- Food temperature measuring devices are provided and readily accessible
Observation: The small reach in cooler at the counter with the milk cartons the temperature measuring device could not be located. During the inspection the manager found a thermometer to be placed in the cooler. ALL COOLING UNITS SHALL HAVE A THERMOMETER AT ALL TIMES TO ASSURE THE TEMPERATURE IS ACCURATE 41 DEGREES OR LOWER. CORRECTED ON SITE

Observation: Observed 5 buckets with sanitizer for wiping food contact surfaces. ALL stored off the floor thank you. BUT they were not labeled.Working containers used for storing POISONOUS OR TOXIC MATERIALS such as cleaners and SANITIZERS taken from bulk supplies shall be clearly and individually identified with the common name of the material. ALL WERE CORRECTED ON SITE. THANK YOU.

Observation: The following food items which are taken from original packaging were not labeled. the Flour Seasoning and Grill Seasoning. SHALL ALWAYS HAVE SEASONING TAKEN FROM ORIGINAL PACKAGING IDENTIFIED WITH THE COMMON NAME OF THE FOOD PRODUCT. BOTH WERE CORRECTED ON SITE.
