      Salad prep cooler thermometer showed 18 degrees, was actually 37 degrees; beverage cooler at front counter showed 22 degrees, was 31 degrees. Thermometer in large kitchen cooler showed 40 degrees but was actually 50 to 60 degrees. Replace inaccurate thermometers. Repeat.

    • Cold hold (PHF food not maintained at 41° F or below 3-501.16, pg 82)
      Cheese, cut tomatoes, and other foods were 50 degrees and above on the top of the grill prep cooler. The lid was open, temperature below was below 40 degrees. Either keep the lid closed or move the cheese and tomatoes below - corrected. Also, remind employees not to overfill the containers in the pizza prep cooler, to maintain temperatures at 41 degrees or below.

    • Thermometers provided/accurate (Thermometers: inaccurate 4-203.11 & 12, p 107, 4-502.11(B)(C), p 128)
      Thermometer in salad prep cooler out front showed above 60 degrees, but the temperature was 36 degrees - replace inaccurate thermometer.
    • Food contact surfaces (Storage: equipment/utensils, single service & use items 4-903.11, p 141)
      Paper buckets, cups and pizza boxes are stored on the floor in the basement. Obtain wrapped straws or use single-service dispensers for straws at the waitress station.
  • Other Operations
    • Smoking area: designated/posted (Smoking prohibitions in public buildings: signs posted, ashtrays present, smoking observed. IAC 641-153)
      There are no Iowa approved "No Smoking" signs at the back doors. All entrances used by customers, employees and delivery drivers need the Iowa signs. Check www.IowaSmokefreeAir.gov or call 888/944-2247 for signs.
