    Observation:Observed alfredo sauce and spaghetti sauce with meat reheating in steam table - alfredo was 125 degrees and spaghetti sauce at 115 degrees. Pans were placed on stove to reheat, corrected on site.
  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observation:Observed raw shell eggs on shelf above pre-cooked foods in kitchen refrigerator - corrected on site.
  • Common name-working containers
    Observation:Observed spray bottles of sanitizer and window cleaner were not labeled with contents, corrected on site.
  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation:There was no detectable level of sanitizer in dishwashing machine - the chemical container was empty. A full container was connected to machine, lines were primed, corrected on site.
  • Material characteristics of non-food contact surfaces
    Observation:Observed the basement shelves have chipped and peeling surfaces.
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation:There is no thermometer in both salad prep coolers at the wait station.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation:There is no digital, instant-read food thermometer with thin-diameter probe to monitor cooking temperatures of thin foods.
  • Handwashing signage
    Observation:There are no handwashing signs at the basement sink in dough prep area and employee restrooms - signs were printed, corrected on site.
