    Observation: Triple sink method is not being utilized to clean and sanitize dishes. How to setup the sinks and store dirty dishes to do them in batches was explained at time of inspection.

    Observation: Not sufficient space for storing dirty dishes and air drying clean dishes. Wooden structure is not easily cleanable.

    Observation: Carpeting under coolers is subject to moisture.
  • Light intensity
    Observation: Light intensity in store area does not allow for easy inspection - it was previously a dining room -which lighting was sufficient for.
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observation: No date on flan for retail sale.
  • No direct connection between sewage system and from culinary equipment
    Observation: Triple sink used as food prep sink is directly connected to waste line out without air gap.

    Observation: Walk in cooler holding at 55 degrees. Chest freezer only - not working at time of inspection - needs to be replaced before license is approved.

    Observation: No drainboards for soiled items.
