Compliance with submitted HACCP plans and approved variance procedures Observation:(1) Food employee did not follow written procedure requirement to take required second pH of rice thirty minutes after first test. PIC checked ph of rice at time of inspection. (2) Food employee failed to cool rice to 70* or below prior to beginning preparation of sushi rolls per written procedure. Rice did reach 61* after 2 hours. (3) Food employee failed to follow written procedure requirement to cool sushi rolls to 41* or below prior to packaging. Packaging was removed at time of inspection to finish cooling process. Photo of procedure attached.
