Observation including specific section in violation. Labeling requirements found in CFR Part 101 are not being adhered to. Specifically, all ingredients, and the common name of allergens, shall be identified on finished product labels. Example: Peanut Butter, used as an ingredient in candy making, must include the ingredients that make up the peanut butter product - in addition to identifying Peanuts as a common allergen that the product contains. Printed and left for reference were 21 CFR Parts 150.110 (Fruit Butter), 150.140 (Fruit Jams), 150.160 (Fruit Preserves & Jams), 101.4 (Designation of Ingredients).
- Shown to be effective
The procedure used for sanitizing of equipment and utensils has not been shown to provide adequate sanitizing treatment. Specifically, a third compartment sink is needed to properly wash, rinse and then sanitize equipment and utensils. The handwash sink must be designated for handwashing only and be available for use at all times.
