    Observation: Facility does not have a certified food protection manager on staff.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation: Thin probe thermometer not available on site.
  • PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
    Observation: Chilli moved from cooler to steam table for hot holding without heating 165f. Staff put chilli on stove for proper reheating.
  • Disclosure of menu items offered or served raw or undercooked
    Observation: Disclosure statement missing from facility for cook to order eggs.
