    Observation: Not maintaining records for 6 months, only 30 days. Corrected by instructing to store records for 6 months.
  • equipment food contact surfaces and utensils clean to sight and touch.
    Observation: Well for ice cream scoop and scoop itself not cleaned after last shift. Cleaned and sanitized by staff.
  • Air drying of equipment and utensils
    Observation: Wet stacking of plastic containers
  • Protecting food from environmental contamination
    Observation: Water dripping from pasta cooling tray down onto pasta storage drawer. Staff replaced tray.
