3-302.11(A)(2) - --In the Koch RIC there were 3 boxes of raw chicken being stored directly above 2 metal food grade pans of raw beef. COS-rearranged items. (Note: no leakage detected, the boxes had sealed bags of raw chicken and the metal pans had aluminum foil covering the raw beef).
KDA_3_30212 - --On a shelf below the large metal table (across from the 3 compartment sink) there was a plastic 12 qt food grade container with a white granular substance and not labeled. The cook said it was salt.
KDA_4_20211A2 - --In the utensil drawers there were 6 rubber spatulas with cracked, rough edges (not easy to clean). COS-set aside to trim the edges smooth. There was also one black plastic spatula with a melted edge and peeling. COS-discarded.
KDA_4_60111A - --On the utensil rack next to the True RIC there were 3 clear plastic food grade containers with sticker residue left on them and stored clean (can hold bacteria). On top of the Whirlpool RIF there were four (22 qt) plastic food grade buckets with stickers left on the outside and stored clean (can hold bacteria). The buckets are used to store dry food products (flour, sugar, salt, bread crumbs ect.) but they were not in use at the time. In the utensil drawers there were 2 metal tongs with dried food debris on the food contact surfaces and one black plastic food smasher had dried food debris in the slots. The large mixer had dried food debris on the metal surface where the whisk is inserted. The cook said it was not used today. COS-cleaned mixer. COS-placed the containers and tongs in the ware wash area and discarded the plastic smasher.
KDA_4_90311B - --In the dry food storage room on a speed rack there were 20 metal sheet pans facing up and not covered. (Note: told the cook to invert them).
KDA_6_30114 - --There were no handwashing signs in the employee restroom or by the designated handsink. COS-left handwashing posters.
