01/21/2015 | Inspection | Atoi = at time of inspection. Cold-hold unit temperatures measured from upper compartment: coleslaw 32 degrees F, sliced tomatoes 38 degrees F. Discussed the following: obtaining chlorine test strips for kitchen sanitizing solution; proper cooling procedures for cooked chicken wings; method of reheating pre-made / cooled soups (per interview with cook Bill Thony, soups are first properly reheated on stove to at least 165 degrees F (or boiling) prior to transferring to crock pot, which holds soups at minimum of 140 degrees F. Please fax copy of thermometer receipt to Monticello District Office at 845-794-3165 (attention to Ashley Peters-Blume, from Welsh's Cabin) within 2 days, or by email at ashley.peters@health.ny.gov. Will verify availability of thermometer at time of surveillance sample collection. |
