Chemicals were stored above or on the same shelf with food, equipment, and/or single service articles in the snack bar area. One can of sterno was stored on the exterior top of the ice machine.

Food temperature measuring devices for ensuring proper food temperatures are not calibrated and/or functioning properly. Metal stem thermometer reading 46*F using the ice water method of calibration.

Frozen foods observed not maintained in a frozen state in the walk in freezer. Meats and bread products were soft to touch. PIC stated the unit was recently serviced and will take corrective action by 30 July 2010.

Dust and food splash observed on the exterior surface of the ice machine dairy side. Dust accumulated on the exterior surface of the hood system

Observed hose on ground attached to hose bib with a back flow prevention device located in the outdoor trash compactor area. Hose wrapped up off ground for temporary corrective action.

Dust and webbing observed on the wooden floor surfaces in the kitchen and dry foods storage areas. Correct by 30 July 2010

Observed over twenty hard rodent droppings on the wooden floor beneath pallets in the dry foods storage area. Reviewed integrated pest management. There was no signs of live activity noted at time of this inspection. Correct by 30 July 2010.
