CATERING KITCHEN: NOTED THAT THE FACILITY HAS INSTALLED A TWO COMPART SINK. A THREE COMPARTMENT SINK IS REQUIRED WITH FOLLOWING FOOD CODE REQUIRMENT:(b) Large equipment and utensils. Sink compartments shall be large enough to accommodate immersion of the largest equipment and utensils that require cleaning by immersion. If equipment or utensils are too large for the warewashing sink, a warewashing machine or alternative equipment as specified in subsection (c) shall be used. COMPLIANCE SHALL BE MADE WITHIN 30 DAYS.
