  • In-Use Utensils & Between Use Storage (46.302)
    --Scoop stored in the ice machine with the handle touching the ice. The scoop was removed along with all adjacent ice.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    --Raw ground meat was held at 45°F in the prep area rather than 41°F or below as required. The plastic container was set in another container w/ ice and an ice pack. The ice from the bottom could in no way keep the entire contents cool (i.e. with ice up the sides to the content level). Reviewed w/ cook and owner. Meat was stated to be out approximately a half hour and was placed back into the 7 Up cooler (30*F) to cool down.
  • Materials for Surfaces that are Nonfood-Contact Surfaces (46.522)
    --Observed a piece of cardboard w/ a tape on the ceiling covering a hole above the ice making unit. Remove and seal/repair properly.
  • Cleanability of Floors, Walls, & Ceilings (46.921)
    --Noted paint is chipping/peeling on the block wall in the dish washing/drying area.
