    --Cut lettuce and tomatoes were held at 50°F, rather than 41°F or below as required. Product had just been cut, and was removed to the walk-in cooler to bring it below 41°F before being placed back into prep unit.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --Vents above the deep fryers have a heavy buildup of grease, which can fall back onto food, needs cleaned immediately.
