There must be a written statement stating the 2 barriers that are used prior to handling ready to eat food with bare hands (double hand wash and hand sanitizer) and a statement of the corrective actions that will be taken if employees are seen not following procedures.
- Did not observe proper air gap between bottom of pipe and top of drain at 3 compartment sink. Ensure there is an air gap that is 2 times the diameter of the pipe between the top of the drain and the bottom of the pipe.
- Observed thermometer inside the far left reach in cooler at the cold hold unit broken. The mercury piece was detached. Ensure the thermometer is replaced.

- Observed soda nozzles with soda residue. Ensure nozzles are cleaned and sanitized on a routine basis.
- 229.165 (m) (2)non food contact dirty. At time of inspection, counter area for soda machine had stick residue on counter. Ensure counters are routinely cleaned when soiled with debris.
