  • 229.167 (p) (5) use of wrong sinks. Handwashing sink to be utilized for handwashing only. Container stored insode sink basin.

  • 229.164 (e) (1) (D) (ii)Bare hand documentation. Documentation for handling ready to eat foods (such as shredded cheese) is incomplete. At time of inspection, documentation stating the 2 barriers that are used prior to ahndling food and the corrective actions could not be produced for inspector. The signed acknowledgement form is posted on the wall next to a handsink. Ensure all of the docuementation is completed and kept at estbalishment. There must be a written statement stating the 2 barriers that are used prior to handling ready to eat food with bare hands (double hand wash and hand sanitizer) and a statement of the corrective actions that will be taken if employees are seen not following procedures.
  • Did not observe proper air gap between bottom of pipe and top of drain at 3 compartment sink. Ensure there is an air gap that is 2 times the diameter of the pipe between the top of the drain and the bottom of the pipe.
  • Observed thermometer inside the far left reach in cooler at the cold hold unit broken. The mercury piece was detached. Ensure the thermometer is replaced.

No documentation is maintained at the food establishment that food employees contacting ready-to-eat foods, such as pizza toppings, with bare hands utilize two or more of the following control measures to provide additional safeguards to hazards associated with bare hand contact using double hand washing. Provide documentation that handling of ready-to-eat foods with bare hands is accomplished using two or more of the following safeguards: double hand washing, nail brushes, a hand sanitizer, incentive programs for sick employees not o work, or control measures approved by the regulatory authority.
  • Observed soda nozzles with soda residue. Ensure nozzles are cleaned and sanitized on a routine basis.
  • 229.165 (m) (2)non food contact dirty. At time of inspection, counter area for soda machine had stick residue on counter. Ensure counters are routinely cleaned when soiled with debris.
  • Ch 13, Art II, section 13-26 Display permit. At time of inspection, food permit is not being displayed at establishment. Ensure a copy of the food permit is obtained and posted at establishment.
