Large pieces of food were found in the hand sink. Hand sinks are for hand washing only.
Eggs were stored over cooked and other ready to eat foods in the small line refrigerator. Raw meat and eggs must be stored below and away from ready to eat foods.

A large quantity of food had been taken out of a small reach in cooler in the morning, and was not being cooled back down fast enough. The warmest food was at 51°F. All potentially hazardous food must be kept below 41 °F. All potentially hazardous food that was kept above 41 °F was placed in a larger cooler.

Open can of soda on prep table. All drinks must be below and away from food handling areas.
Refrigerated, ready-to-eat, PHF foods held for more then 24 hrs. Shall have a consume-by-date. The day of preparation shall be counted as day 1. If held at 41F or less food can be kept for a max of 7 days.
Observed tortilla dough stored in garbage bag. All food should be stored in food grade containers.
