- 229.163 (n) (1) eat.drink.smoke.. All personal drinks in kitchen area must have a proper cover and straw. Found several personal drinks on prep-tables in kitchen area, with no covers, or straws. Also, instruct employees that they cannot wear bracelets when handling RTE Foods, only bracelet allowed is a medical bracelet. One employee handling vegetables is wearing a bracelet, and handling RTF foods with bare hands. In addition, instruct employees not to wash equipment in handsinks. Observed employee washing drain boards to the shake machine, inside handsink.
- 229.164 (e) (1) (D) (ii)Bare hand documentation. Unable to locate bare hand documentation, establishment must maintaine proper documentation for bare hand contact, along with employees signatures, and steps taken by establishment, if employees are not following the correct procedures. Managment stated they cannot locate the paperwork, showing their training procedures.
- 229.164 (f) (2) (A) (ii) (II) meat arrangement. Do not store raw beef patties directly over pancake mix, and cooked meat items inside coolers. This creates a contamination potential, for food items, below raw items.
- 229.165 (r) (3) (D)no sanitization. Observed employee who washed drip pan from shake machine, inside handsink, then place equipment back onto machine. Instruct employees on properly washing of equipment, also did not properly sanitize equipment.
